  1. 500 gr harina 0000
  2. 250 ml agua templada
  3. 50 gr azúcar
  4. 10 gr levadura seca o 25gr de levadura fresca
  5. 10 gr sal
  6. 60 gr manteca pomada
  7. Para la cubierta
  8. 250 gr azúcar negra
  9. 30 gr harina
  10. 40 gr azúcar
  11. c/n Agua

  1. Primero hay que activar la levadura(si es fresca se puede saltar este paso)ponemos toda la levadura seca con el azúcar en el agua templado y revolvemos bien hasta que se se haya disuelto bien tapamos y dejamos reposar por 15 minutos aproximadamente, mientras en un bowl ponemos la harina con la sal y revolvemos muy bien, volcamos nuestra levadura activada y comenzamos a integrar, una vez haya absorbido la mayoría del líquido tiramos nuestra masa a la mesada y amasamos un poco más
  2. Cuando ya no hay harina y se formó nuestra masa le ponemos la manteca en dos o tres veces y amasamos hasta conseguir una masa tierna que no se pega(la masa no se tiene que pegar) La colocamos nuevamente en el bowl la tapamos bien y dejamos reposar 30 minutos
  3. Cuando la masa ya esté reposada la ponemos en la mesada(sin harina ya que la masa no se pega en caso de que si se pegue sí poner un poco de harina)desgasificamos y con un palote lo estiramos de medio centímetro de espesor y con un cortante lo vamos cortando y lo ponemos en una bandeja previamente enmantecada(sin harina)pegadas, tapamos y dejamos reposar hasta que doblen su volumen, precalentamos el horno a 220°c
  4. En un recipiente ponemos el azúcar negro con la harina y el azúcar común revolvemos, pincelamos muy poquito solo unas gotas a nuestras tortitas y con una cuchara le colocamos encima el azúcar negra(bastante cantidad)y las llevamos al horno por unos 12 a 15 minutos(depende de cada horno) y listo!!!
  5. Con un cortante de 7cm de diámetro me salieron unos 39 y con uno de 9cm de diámetro 21 +-
